Maxine Fortenberry's Red Velvet cake
Max Fort Redvelvet 01
Ingredients:
  • Vegetable oil for the pans
  • 2 ½ cups all-purpose flour
  • 1 ½ cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon fine salt
  • 1 teaspoon cocoa powder
  • 1 ½ cups vegetable oil
  • 1 cup buttermilk, at room temperature
  • 2 large eggs, at room temperature
  • 2 tablespoons red food coloring (1 ounce)
  • 1 teaspoon white distilled vinegar
  • 1 teaspoon vanilla extract
  • Cream Cheese Frosting, recipe follows
  • Crushed pecans, for garnish

Directions:

Preheat the oven to 350°F. Lightly oil and flour 3 (9" by 1½" round) cake pans. In a large bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder. In another large bowl, whisk together the oil, buttermilk, eggs, food coloring, vinegar, and vanilla.

Using a standing mixer, mix the dry ingredients into the wet ingredients until just combined and a smooth batter is formed. Divide the cake batter evenly among the prepared cake pans. Place the pans in the oven evenly spaced apart. Bake, rotating the pans halfway through the cooking, until the cake pulls away from the side of the pans, and a toothpick inserted in the center of the cakes comes out clean, about 30 minutes.

Remove the cakes from the oven and run a knife around the edges to loosen them from the sides of the pans. One at a time, invert the cakes onto a plate and then re-invert them onto a cooling rack, rounded-sides up. Let cool completely. Frost the cake. Place 1 layer, rounded-side down, in the middle of a rotating cake stand. Using a palette knife or offset spatula spread some of the cream cheese frosting over the top of the cake. (Spread enough frosting to make a ¼" to ½" layer.) Carefully set another layer on top, rounded-side down, and repeat. Top with the remaining layer and cover the entire cake with the remaining frosting. Sprinkle the top with the pecans.

Cream Cheese Frosting:
  • 1 pound cream cheese, softened
  • 4 cups sifted confectioner's sugar
  • 2 sticks unsalted butter (1 cup), softened
  • 1 teaspoon vanilla extract

In a standing mixer fitted with the paddle attachment, or with a hand-held electric mixer in a large bowl, mix the cream cheese, sugar, and butter on low speed until incorporated. Increase the speed to high, and mix until light and fluffy, about 5 minutes. (Occasionally turn the mixer off, and scrape the down the sides of the bowl with a rubber spatula.) Reduce the speed of the mixer to low. Add the vanilla, raise the speed to high and mix briefly until fluffy (scrape down the bowl occasionally). Store in the refrigerator until somewhat stiff, before using. May be stored in the refrigerator for 3 days. Yield: enough to frost a 3 layer 9" cake.

Costume Ideas

Sookie Stackhouse

Clothing:

If you were a blond-haired telepathic waitress with a preference for vampire lovers, you probably wouldn't need any tips on dressing like one. In case this doesn't describe you to a tee, it's tough to beat the official HBO set available HERE for a distinctive Sookie look. We've all seen her in many different outfits, but unlike Eric who is almost always seen in one of his two signature outfits, Sookie's wardrobe is much more diverse. As seen in the HBO set, when coupled with a head of blonde hair, it's going to be hard to top the classic Merlotte's uniform. Sookie completes her waitress ensemble with black "short-shorts" - which can commonly be found at most women's retail clothing shops, and black Nike sneakers. If you're lucky, given the time of year it is you may be able to pick some shorts up on sale, otherwise this may be an online order item since stores are stocking for fall fashions. The Nike sneakers (as seen in the slideshow below) may be difficult to find if you just have to have the exact pair Sookie wears (Women's Nike Cortez Basic Nylon Black/White). Since her shoes aren't seen very often, opting for cheaper and easier to find black sneakers will probably work just as well, and it's doubtful anyone would call you out on it even if they noticed. ;)

Hair:
Generally speaking, a ponytail will do the trick with the waitress outfit, but even if you've opted to brave one of Sookie's other looks, her hairstyles are not complex, and easy to manage.(see slideshow for ideas) If you happen to already be sporting blond hair close to the same length as Sookie, you may be able to get away with styling your natural locks. Otherwise, a wig is a common choice, and a local Halloween specialty shop, costume store, or beauty supply will have what you need.

Makeup:
Sookie lets her natural beauty shine through, so ideally you'll want to go for a more subtle, natural look in the makeup department. Light pink or peach lipstick is preferable, with a conservative amount of dark eyeliner, and mascara on the upper lids only.

Optional:
Fang-marks can easily be achieved with some simple costume makeup, or if you're inclined to go the extra mile, vamp-bite temporary tattoos (like the ones found HERE) are incredibly realistic, and will greatly reduce the risk of rub-off.

Notes:

  • While the HBO set is "Sookie inspired," it is worth mentioning that it will work just as well with any of the other uniform-wearing female Merlotte's employees seen in the series.
  • You may wish to emulate the famous tooth-gap that Anna Paquin brings to the character, but you'll need to make a decision on which direction to go with it. It will be nearly impossible to get the gap exactly right, so an alternative would be to purposely overdo it and make the gap extra wide to draw attention to it.
  • When choosing your short-shorts for Sookie's waitress look, try to find a pair with pockets. They'll be tiny pockets, but this outfit doesn't offer much in the way of storage, and you'll be thankful you at least have a place for your ID, and possibly your keys.

Eric Northman

Clothing:

If you happen to be a statuesque Scandinavian vampire, Eric is going to be a piece of cake for you. Assuming not, here are a few tips to get you looking more like a thousand-year-old vamp! Eric is probably the easiest character to emulate in the series. He is almost always in either a black tank top, or a black leather jacket with a solid colored or subtle print V-neck t-shirt. The tracksuit look is another option; while it wasn't used for long, those who know True Blood will recognize it immediately. See the Eric slideshow for clothing ideas.

Hair:
This really depends on your own preference, or on how long your hair is if you happen to be working with your own locks. Since gel is required for Eric's short hair, a wig is pretty much only going to work with his longer style. If you're having trouble finding the right length, remember you can always buy a long straight blond wig and trim it down yourself.

Makeup:
Not a lot of makeup is needed to get yourself looking sufficiently undead (no glitter!! *wink-wink*), but you'll need to pale yourself up to bring out your inner vamp. A uniform dusting of pale foundation and/or face powder should do the trick, just be careful not to get any in your eyebrows, or you'll spoil the whole immortal look with grey eyebrows. ;) Some light purple or reddish-purple eyeshadow can be applied under the eyes to really bring out the undead look, but be careful not to overdo it or you'll be reapplying your foundation.

Optional:
Teeth. Since it is near impossible to find vampire teeth that are positioned the way our True Blood vamps' teeth are, you may decide to forego them all together, and stick to being a passive Eric. However, if you're willing to overlook incorrect placement, there are several great teeth options HERE, including some nice retractable models.

Residual blood. As with any vamp, you may want to draw attention to your bloodlust with some fake blood at the corners of your mouth, or even dripping down from one corner - just try not to go overboard with it.

Necklace. The HBO store offers 3 different "Eric" necklaces, however two of them (the more expensive two) are silver - which is clearly not realistic. The third is shown in the above slideshow, and any necklace you may find that resembles it will do the trick.

Bill Compton

Clothing:

Are you a dark-haired southern gentleman vampire with an air mystery about you? No? Well then, you just may need a little help with this costume, so lets see if we can identify some key points to Mr. Compton's look. Bill's attire is easy to put together, but his character may be quite difficult to pull off. "Vampire Bill" typically displays very little color in his outfits, generally donning blacks, greys, or muted earth-tones. The trouble is, he doesn't have a real "signature look" outfit like some of the other main characters. You may refer to the slideshow provided for some clothing ideas, but your best bet may be to go for his Henley style button-top thermal shirt look. The HBO store offers a black version HERE, which actually has the TrueBlood logo embroidered on the back of the neckline. While this logo may help people identify the character you're aiming for, this shirt is quite pricey, and only comes in one color. An alternative would be to find a thermal that will achieve the same look, but for a fraction of the cost - such as the example found HERE. The key is finding a brand/style that is form-fitting, as Bill's shirts tend to leave very little to the imagination. If you're going to brave one of his lesser-known looks, none of his outfits are going to be particularly difficult to find at your local department store.

Hair:
Bill's hair is pretty straightforward: short, medium-dark brown, in a variety of different styles which basically amount to simply combing it differently. The key here is going to be his signature sideburns. If you're able, it's easiest to simply grow your own, otherwise you'll need to find some fake sideburns at a novelty or costume shop. These shouldn't be too hard to find, as there are many male costumes which require sideburns to complete the effect. (Edward Cullen for instance....)

Experiment a little with red food coloring and different consumable liquids (in case someone decides to try and drink it) in order to get the thickness you're looking for. Corn syrup usually works well, or you can simply use water for a quick and easy solution.

Lafayette

Clothing:

If you've decided to go as Lafayette this Halloween, and you're lucky enough to be an African-American man, then this is going to be a snap. For the rest of us, the "Lafayette inspired" set found HERE is a good place to start for our handsome friend's wardrobe. On the other hand, a stylish doo-rag and a black mesh tank top will work just as well, without having to drop the extra money on shipping. If you don't mind the cost of shipping, the HBO set is actually a pretty good deal, as it includes the hat, jersey, and essential "L" necklace all for around $83 shipped. Timberland boots are the preferred choice of footwear, but there are several other brands out there which will pass for the same effect, and not break the bank. If you're a stickler for accuracy, and wish to order the exact boots shown in the slideshow, they are Timberland summer boots style 54054 in black. Up top, Lafayette tends to wear women's thin-strapped tops quite a bit, as well as gold print designer t-shirts and see-through mess tank tops. For pants, a pair of "skinny jeans" will work nicely, but if you really want to go for it, he has been known to sport a black kilt. The man definitely knows how to accessorize, so keep in mind that little things like a nice women's belt worn off the hip and over the top of an outfit can go a long way. Refer to the Lafayette slideshow included here for more wardrobe ideas; all of his looks should be easy to put together with items available in your stores.

Hair:
Lafayette's hair is a simple matter. Step 1: Wear a hat, or preferably a doo-rag. Step 2: Look fabulous.

That's it. :) The only issue here is making sure your own hair is adequately concealed.

Makeup:
Blue, pink, or gold eyeshadow to match the outfit is optional and recommended; Lafayette doesn't always use it, but the main "must" is his signature black lip-liner. You can see this in most pictures of him, and to go without it would be a major oversight.

Optional:
Vials of V. Scientific vials can be had online for a reasonable price on many different sites, including HEREon amazon.com. Fang-marks can easily be achieved with some simple costume makeup, or if you're inclined to go the extra mile, vamp-bite temporary tattoos (like the ones found HERE) are incredibly realistic, and will greatly reduce the risk of rub-off.

Banana-hammock. Lafayette loves his thongs, so don't be shy! Man-up and go for a shiny gold pair because anything worth doing, is worth doing right.

Jewelry. Lafayette is usually seen wearing any number and combination of rings, bracelets, and necklaces, so don't be afraid to explore his expressive nature - it would be almost impossible to overdo it.

Crystals. "Bedazzle" everything! Pretty much anything shiny is going to be your friend on this outfit.

Jason Stackhouse

Clothing:

Let's assume for argument's sake that you weren't the quarterback of your high-school football team, you're not trying to blackmail the local sheriff into making you a deputy, and you're not in love with a werepanther. At least you can look the part this Halloween, and here's a few pointers on how to get it done. HBO sells their "Jason inspired" set for approximately 1 arm, and 1 leg, but if you're just itching to nail this character, you can find it HERE at their online store. However, they're only asking a couple of fingers for just the Bon Temps Football shirt he wears (found HERE), so that might be the preferred way for you to go. Alternately, Jason primarily wears muscle shirts and tank tops coupled with blue jeans and a belt with buckle. Check out the Jason slideshow for the exact look, and possible alternate outfit ideas.

Hair:
Jason's short, blond, purposely messy hair can be seen in most of his pictures (the ones in the above slideshow, for instance) and shouldn't be too hard to duplicate. Either a wig, or your own hair should work fine, depending on how close your normal style is to Jason's

Optional:
Tear a plain white paper towel into small pieces approx. 1½" square. Mix up some nice dark-red "V" using food coloring and either water or corn syrup (if you have any) - then, using an eyedropper or a toothpick, put a drop of your fake "V" in the middle of each one. Once you let them dry, you can put them in a zip-lock baggie and pass them out to your friends and fellow party-goers, inviting them to join you in a V experience.


Jessica

Clothing:

All you redheaded newborn vamps out there can probably skip this section, but for you mortals who want a more unique True Blood look that you might not see at a party, lets go over a few basic Jessica tips. You're welcome to refer to the Jessica gallery you see here for different outfit options, but the hostess look is probably going to be your best bet for being recognized. The same Merlotte's top that Sookie wears is available HERE by itself, or HERE with a matching mug for only $5 more. Jessica wears a few different styles, but for anyone who's seen Season 3, the most bells are going to go off when they see long red hair, pale skin color, and the classic white Merlotte's shirt. A conservative black skirt and white "comfortable shoes" round out Jessica's hostess look, and both can be found virtually anywhere women's clothing is sold. View her slideshow for other possible outfit ideas if the hostess look is not what you're after.

Hair:
3 words: Long. Red. Ponytail. Refer to the slideshow for her exact style of ponytail/"poof" combo, but a basic ponytail should work just as well, and with considerably less maintenance. Strictly going by percentage of people who either have naturally long red hair, or who have long hair they are willing to dye, the vast majority are going to need to pick up a wig. Try to find a natural looking shade of red in order to avoid being mistaken for Arlene. Makeup:
Not only is Jessica a vampire, she's a red-headed vampire... it doesn't get any more pale than that! Check the close-up of her face in the slideshow for exact makeup styling, but you'll definitely need to invest in the palest foundation/face powder you can get your hands on.

Alcide Herveaux

Clothing:

If you're feeling extra wolfy this year, you may want to try for Alcide, Sookie's season 3 near-love-interest. Without a great deal of on screen time, the only way you're going to be able to pull this character off as a costume is going to be with a visit to HBO's online store to pick up the "Alcide inspired" set available HERE.

Hair:
Again, not a lot of face-time to go off of, but a dark brown, medium-length mane is what you're shooting for. Ideally, you'll be wearing his construction company hat in order to help clue people in to your intent, so styling shouldn't really be an issue for "Al."

Optional Pump iron. Being super ripped with killer abs is not going to hurt your case for portraying Alcide one little bit.

Tan. A spray-on tan might help seal the deal, unless you already happen to have a dark, golden brown hue.

Talbot Angelis

Okay, so dressing as Talbot may not be the easiest of options; but having the remains of Talbot may make

quite the funny decor for any Halloween party! All you will need is a glass or crystal jar that is similar to that which held Talbot's remains. The ingredients within the crystal jar can be very easy to make! I suggest taking red strawberry jello and mixing it with thawed strawberries. The gooier looking, the better! After all, this IS the remains of Russell's beloved Talbot! You can even add a small name tag (as seen in the picture), to add that little bit of Halloween, True Blood humor!
